Ingredients
500 mL (2 cups) rolled oats, uncooked
500 mL (2 cups) milk
500 mL (2 cups) cottage cheese
60 mL (¼ cup) maple syrup
625 mL (2½ cups) fresh or frozen blueberries
NOTES: Try using other fresh or frozen fruit, such as strawberries or peaches, or try using cold cereal instead of prepared oatmeal.
Directions
Prepare the oats using one of these methods:
Stovetop: Bring milk to a simmer in a saucepan. Add oats and stir. Lower heat and cook for 5 minutes, stirring occasionally.
Microwave: Combine oats and milk in a large microwave-safe bowl and microwave on high for about 5 minutes.
Overnight: Combine oats and milk in a large bowl and refrigerate for a few hours or, ideally, overnight.
Place the cottage cheese, prepared oatmeal and blueberries in serving bowls with spoons.
Have each student place a spoonful of cottage cheese in the bottom of a cup.
Add 2 mL (½ tsp) of maple syrup.
Add 2 large spoonfuls of oatmeal.
Add 2 large spoonfuls of blueberries.
NOTES: Top the skyscrapers with nuts or seeds for an added crunch.
