Ingredients

  • 4 potatoes 
  • 30 mL (2 Tbsp) minced onion 
  • 2 eggs 
  • 30 mL (2 Tbsp) all purpose flour 
  • 10 mL (2 tsp) salt 
  • vegetable oil 
  • sour cream and apple sauce, to serve (optional) 

Directions

  1. Peel and rinse potatoes. 
  2. Grate potatoes on a cutting board. 
  3. Mix potatoes, onion, eggs, flour, and salt in a bowl. 
  4. Heat a non-stick frying pan on medium-high. Add enough vegetable oil to cover the bottom of the pan. 
  5. With your hands, make round potato patties about 1 cm (½") thick (like a burger patty). 
  6. Place potato patties in hot oil, being very careful. Wear oven mitts if the oil starts to spatter. 
  7. Using a spatula, turn the latkes over when bottom has browned, 2–3 minutes. Allow other side to brown, then remove to a plate and serve with sour cream and apple sauce, if desired.
