Ingredients

  • 250 mL (1 cup) all purpose flour 
  • 3 mL (¾ tsp) baking soda 
  • 1 mL (¼ tsp) salt 
  • 125 mL (½ cup) white sugar 
  • 125 mL (½ cup) kefir 
  • 60 mL (¼ cup) canola oil 
  • 5 mL (1 tsp) vanilla 
  • 2 eggs 
  • 3 bananas 
  • Butter for greasing the pan 

Directions

  1. Preheat oven to 180 °C (350 °F). Grease a loaf pan.  
  2. Mix flour, baking soda, and salt together in a large bowl. Set aside. 
  3. Whisk together eggs, sugar, oil, vanilla, and kefir in a medium bowl until combined.  
  4. Pour wet ingredients over dry ingredients and mix until just combined. 
  5. Use a fork to mash bananas in the medium bowl. Add to batter and mix gently. 
  6. Pour batter into prepared loaf pan and bake for 60–65 minutes or until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before serving.
